Top Hat Pizza
1, 7" round whole-wheat pita pocket bread
3 Tlb. prepared pizza sauce
1/4 green or red bell pepper, chopped into small pieces
1/4 small onion, chopped into small pieces
1/8 teaspoon dried Italian herb seasoning
1/2 ounce part-skim mozzarella cheese (2 Tlb. grated)
1/2 teaspoon grated Parmesan cheese
Pre-heat oven to 400 degrees.
Using kitchen scissors, cut out a a circle from top layer of the pita bread, leaving 1 inch of top all around to form an edge or border. Save cut-out circle.
Place bottom of pita on cookie sheet or baking sheet. Place cookie sheet with the pita bread on middle rack in hot oven. Bake 5 miinutes.
Carefully remove cookie sheet from oven and place pan on wire cooling rack. Cool pita bread slightly.
Using spoon spread pizza sauce evenly on top and also, under edge of pita bread. Sprinkle bell pepper, onion, Italian seasoning, mozzarella cheese evenly on top of sauce.
Optional : Can add 1 ounce of cooked lean ground beef, low-fat pepperoni or canadian bacon to pizza.
Top with the reserved circle of pita bread to form a "hat."
Return completed pizza on cookie sheet to oven.
Bake in hot oven for 8-9 minutes.
Sprinke with parmesan cheese and let stand a few minutes.
Breakfast Tacos
1 frozen whole grain waffle, toasted
2 Tbls. peanut butter
1 medium banana, sliced
Toast waffle and spread peanut butter while still warm.
Top with sliced bananas.
Fold in half like a taco and enjoy.
Kids can add additional condiments such as coconut, sliced almonds, raisins or whatever they fancy
Fresh Fruit Burritos
This delicious blend of flavors (fresh fruit, peanut butter, and vanilla yogurt) all wrapped up in a flour tortilla, makes a healthy snack for kids and grown-ups alike.
4 six-inch flour tortillas
4 Tbsp creamy peanut butter
1 banana
4 medium fresh strawberries
1 medium fresh peach
¼ cup fresh blueberries
4 Tbsp vanilla yogurt
Wash fresh strawberries, blueberries, and peach; peel peach, half and remove pit.
For each burrito, spread 1 Tbsp peanut butter evenly on a flour tortilla to within ½ inch of edge.
Onto each tortilla distribute in a line along the center ¼ sliced banana, 1 sliced fresh strawberry, ¼ thinly sliced peach and approx 1 Tbsp blueberries.
Drizzle 1 Tbsp vanilla yogurt over the fruit.
Carefully fold one side of tortilla over the fruit, tucking the edge under the fruit so it’s not too loosely packed.
Roll the folded and tucked portion of the burrito towards the other side; the peanut butter will help hold it together. If desired for smaller children, cut the burrito in half crosswise, using a diagonal cut. Enjoy!
Easy Microwave Baked Apples
2 apples (Rome are good baking apples)
2 tbsp brown sugar
1 tsp nutmeg
1 tsp cinnamon
2 tsp butter or margarine
Core the apples, leaving the bottom intact.
In a bowl mix the brown sugar, cinnamon and nutmeg.
Spoon sugar mixture into the apples hollow core, top with 1 tsp butter or margarine.
Place the apples in a deep casserole dish and cover.
Microwave for 3 1/2 - 4 minutes or until tender. Let apples sit for a couple minutes before serving.
Carrot Cookies
These cookies are a moist, soft cookie and my 28 year old daughters favorite!
1 c. mashed cooked carrots
1/2 cup margarine (1 stick)
1 egg
1 c. sugar
1/2 tsp salt
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. lemon juice
Icing:
Grated rind from 1/2 orange
juice from 1/2 orange
powdered sugar
Add margarine to hot mashed carrots.
Add other ingredients as listed.
Drop by tsp on cookie sheet sprayed with non-stick spray.
Bake 10 min at 400 deg.
Icing:
Soak orange rind and orange juice together while cookies bake.
Mix with enough powdered sugar to make a smooth spreadable icing.
Let cookies cool slightly, then ice.
Healthy Banana Cookies
3 ripe bananas
2 cups rolled oats
1 cup chopped and pitted dates
1/3 cup vegetable oil
1 tsp vanilla
Preheat oven to 350 degrees F.
In a large bowl, mash bananas. Stir in oats, dates, vegetable oil and vanilla. Mix well and allow to sit for 15 minutes.
Drop by teaspoons on an ungreased cookie sheet.
Bake for 20 minutes in a preheated oven or until lightly brown.
Makes about 3 dozen.
