Healthy Recipes - Miscellaneous
Cranberry-Orange Dip and Fruit
1 8 oz. carton lemon or orange low-fat yogurt
½ cup cranberry-orange relish
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 medium apple
1 medium nectarine
Lemon juice
1 cup seedless grape
1 cup strawberries
1 cup fresh pineapple cut into chunks or 1 8 oz. can pineapple chunks (juice pack), drained
Combine yogurt, relish, nutmeg, and ginger. Cover; chill. Just before serving, core apple and remove pit from nectarine. Slice apple and nectarine; brush with lemon juice. Serve dip with apple and nectarine slices, grapes, berries, and pineapple, Yields: 10 servings

Fresh Salsa
4 tomatoes (vine ripe are a favorite)
1 green bell pepper
1 pablano pepper (seeds removed if desired)
2-3 Tbsp Cilantro
1 ½ - 2 Tbsp lime juice
Garlic Salt (to taste)
Salt (to taste)
Chop tomatoes, peppers, and cilantro in food processer. Combine mixture with lime juice, garlic salt, and salt. Refrigerate for approximately 2 hours to allow flavors to combine.
Goes great with the oven baked tortilla chips.

Supreme Fruit Dip
1 cup lowfat cottage cheese
1 cup lowfat orange yogurt
1/4 cup chopped mandarin oranges
Combine the cottage cheese and yogurt in a blender well. Transfer to serving bowl and gently fold in mandarin oranges. Refrigerate until chilled. Serve with assorted fruits and crackers. Pineapple yogurt and crushed pineapple can be substituted for orange.

1 cup fresh or frozen mixed fruit
1/2 banana
1/2 cup vanilla yogurt
Combine all ingredients in blender. Blend till smooth, a few seconds.
