Healthy Recipes - Vegetables
Strawberry Salsa
1 cup coarsely chopped strawberries
1 tablespoon orange juice
1 teaspoon grated orange peel
1 green onion, finely chopped, top included
1 teaspoon Dijon-style mustard
2 tablespoons dried currants
2 tablespoons red wine vinegar
Mix all ingredients in a bowl. Chill, serve with grilled chicken or fish. Makes 1 1/2 cups.
For 1/4 cup serving:

Awesome Brussel Sprouts
2 lb. brussel sprouts, trimmed and halved (or quartered)
1/4 lb. pancetta diced (or thinly sliced prosciutto that is toasted in the oven)
2 garlic cloves, minced
2 T. balsamic vinegar
2 T. olive oil
2 T. chicken broth
1/2 C. Panko Japanese bread crumbs (regular bread crumbs will work as well)
1/2 C. shredded parmesan cheese (not the crumbly stuff in a bottle)
salt and pepper to taste
Directions:
1. Heat oven to 425
2. In a large bowl toss brussel sprouts with pancetta, garlic, and oil
3. Spread vegetables into a 13x9 baking dish
4. Roast for 25-30 minutes or until vegetables are tender
5. Stir in vinegar and chicken broth and sprinkle with bread crumbs and cheese
6. Return to oven for 5 more min

Roasted Vegetables
Your choice of one or more of the following vegetables:
broccoli
cauliflower
carrots
red onion
potato or sweet potato
mushrooms
green and red pepper
Cut up vegetables into bite size pieces. Use pastry brush and lightly brush with olive oil. Salt and garlic pepper to taste. Spread vegetables evenly in one layer on cookie sheet. Roast in oven at 450 degrees for 8 - 12 minutes. Watch and test for "doneness."

Teriyaki Zucchini and Onions
1 tablespoon olive oil
1 teaspoon sesame oil
1 onion (sliced)
2 zucchini (sliced)
2 tablespoons teriyaki sauce
1 tablespoon sesame seeds (toasted)
Heat the oils in a pan. Add the onions and saute until soft. Add the zucchini and teriyaki sauce and cook until the zucchini is soft. Add the sesame seeds and remove from heat.
