As
dietitians (Carol, Holly, and Paula) with Banister and Associates,
we have college degrees in clinical dietetics. We are licensed by
the Oklahoma State Board of Medical Examiners and registered with
the credentialing division of the American Dietetic Association. We
are members of our local, state and national professional organizations.
To maintain our licenses and registration, we obtain continuing education
and advanced training in our field each year. We provide optimal services
and have fun doing it!

Carol
Banister, RD, LD, MS, CDE
President
Carol
received both her Bachelor's and Master's Degrees from Kansas State University.
She served as associate professor at the University of Oklahoma teaching
in the Department of Clinical Dietetics. Carol worked as a clinical dietitian
at Presbyterian Hospital and taught graduate nutrition night classes at
Central State University.
She
opened her private practice in September, 1981. She has served as President
of the Oklahoma City District Dietetic Association, and the Oklahoma State
Dietetic Association. She currently serves on the board for the Oklahoma
State Dietetic Association and she is a mentor for the Nutrition Entrepreneurs
Group of the American Dietetic Association.
Carol
has over 20 years experience in counseling and application of medical
nutrition therapy. She is a Certified Diabetes Educator (CDE). Her areas
of special interest are:
- Diabetes
- Weight
control
- Eating
disorders
- Sports
nutrition
She loves
working one on one with patients, conducting her women's weight management
group, "Positive Weighs" and taking on anything that is a challenge.
Carol spends
her free time with her family, husband Don and children Ashley and Caleb.
She also enjoys volunteering time for church activities, flower gardening,
walking, travel and occasional biking and tennis.
Carol believes
the experience that most prepared her to help people change behaviors
and particularly lose weight is when she was placed on probation in the
dietetics department at college because of being overweight.
So
if you think she doesn't understand your struggle with weight, her response
is "been there, done that."
What
most people don't know about Carol is that she spent 11 years in her local
4-H club and was grand champion steer showman at her county fair!

Paula Partlow, R.D./L.D., MS
Paula,
originally from Illinois, recently relocated to Edmond and joined
Banister and Associates in February 2004. She
has been a registered dietitian for 16 years and has a colorful work
history that reflects her travel and living locations. She obtained
both her bachelor’s and master’s degrees from Eastern
Illinois University and also completed her internship at Sarah Bush
Lincoln Health Care Center. She has worked in hospitals, extended
care facilities, dialysis centers, physician’s offices and
out patient settings similar with Banister and Associates. Most recently,
Paula worked as a Diabetes Care Specialist for a Diabetes Self Management
Program Facility in Michigan.
Paula
enjoys dietetics and chose this profession because she believes
in healthy lifestyles that are not restrictive and afford persons
the ability to enjoy food, social gatherings, and health simultaneously.
Challenges such limited cooking skills, fixed income, lack of social
support are a few of the obstacles that many face and Paula believes
she is able to help clients work around those obstacles, balance
their choices and set goals that will enable them to achieve their
health potential. While expecting her twins, Paula gained 65 lbs
in 9 short months and feels this experience really assisted her into
having better insight of those that struggle with weight control
and other health issues. Paula says “when I know longer could
walk from my parked car to the door of my office without having to
stop to catch my breath nor could sleep on my back from shortness
of breath, I stopped for a moment and thought this must be what it
feels like for some of my patients everyday!”
While taking a break from dietetics, Paula devoted her time to her
family that includes her husband Mike, son Lucas, and twin daughters
Camryn and Delaney. Now while balancing work and family, they all
enjoy great family time camping, cycling, golfing and swimming. Paula
loves to spend her free time in the kitchen trying new recipes or
making her family favorites. She loves to collect cookbooks and recipes.
What
most probably do not know about Paula is that she loves CHOCOLATE!
Of course, her secret……..MODERATION!

Holly RD, LD, MS
Holly joined Banister and Associates June 2007. She received a bachelor and masters degree in Dietetics and Food Management from the University of Central Oklahoma. While in school Holly served
as president of the Student Dietetic Association and on the University
Senate.
Holly has most recently been working for the Citizen Potawatomi Nation's
Diabetes Initiative Program. She has clinical nutrition counseling
skills in all areas, with strong interest in diabetes, hyperlipidemia,
and weight management with special focus on children's weight concerns.
Holly grew up with a sister having type 1 diabetes which has allowed her
to see the challenges and struggles that are associated with diabetes.
She has witnessed the benefits of having good control of your diabetes.
Holly really enjoys helping her clients with diabetes improve their
blood sugar, improve how they feel on a daily basis, while coaching them
toward a normal life without feeling deprived.
Holly's favorite activity is spending time with her husband and
daughter. She loves to be outside going for walks, swimming when it's
warm, planting flowers or skiing. Being involved in church activities
such as teaching bible class, going on mission trips and supporting
youth activities always draws her time and interest. Many people are surprised to learn Holly is highly competitive and she
has a couple interesting stories explaining why she is very scared of birds!

Dawn Jacobson
'Specializing in home fitness
training'
Dawn
is certified in personal training by the Cooper Aerobics Institute.
She will come to your home to complete a fitness evaluation and
design a fitness plan you can accomplish in your home. Dawn has
many years of personal commitment to the field of exercise. She
taught physical education at ORU for several years as well as
completing five marathons, while raising a family with two in
college.

Beverley Sims
Office Manager/Marketing
Beverley Sims brings over 20 years of experience in marketing and business management to the office of Banister and Associates. Past positions include owning and managing a health food store in the Oklahoma City area and as a Consumer Service Representative for Oklahoma Natural Gas Co. She has a Bachelor of Science degree in Secretarial Science, with a minor in Home Economics and Psychology from the University of Central Oklahoma. She also has a Masters degree in Religious Education from Southwestern Baptist Theological Seminary.
Beverley keeps busy at home as a wife and mother, and volunteers at her church. She enjoys traveling, reading a good book, and gardening.
