Black Bean Quesadillas

 
  • 15.25 oz can of Black Beans
  • 1 can Rotel (use mild if don't like spicy)
  • 2 tsp cumin
  • 1 tsp salt
  • 1 bag of shredded cheese
    fresh cilantro (to taste)
  • 5 flour tortillas
  • cooking spray

1. Mix together beans, rotel, cumin, cilantro, salt and pepper in bowl. Heat in microwave 2 minutes to heat through.
2. In a non-stick skillet coat with cooking spray and preheat.
3. Place 1 flour tortilla down and spinkle the whole tortilla with a little cheese (2 tbsp approx)
4. Spread 1/5 of bean mixture (about 1/2cup) on only 1/2 of the tortilla.
5. Fold tortilla in half and cook on both sides until crisp.
6. Cut in thirds, serve with salsa or sour cream.
7. Keep cooked quesadillas warm in oven until ready to serve if you don't serve immediately.
