Brussel Sprouts

 
  • 2lb. brussel sprouts, trimmed and halved (or quartered)
  • 1/4 lb. pancetta diced (or thinly sliced prosciutto that is toasted in the oven)
  • 2 garlic cloves, minced
  • 2 T. balsamic vinegar
  • 2 T. olive oil
  • 2 T. chicken broth
  • 1/2 C. Panko Japanese bread crumbs (regular bread crumbs will work as well)
  • 1/2 C. shredded parmesan cheese (not the crumbly stuff in a bottle)
  • salt and pepper to taste

Directions:
1. Heat oven to 425
2. In a large bowl toss brussel sprouts with pancetta, garlic, and oil
3. Spread vegetables into a 13x9 baking dish
4. Roast for 25-30 minutes or until vegetables are tender
5. Stir in vinegar and chicken broth and sprinkle with bread crumbs and cheese
6. Return to oven for 5 more min
