Chicken Kabobs

whole chicken breast, skinned, boned and cut into 1-1/4"

can (16 3/4 oz.) pineapple chunks, drained (reserve juice)

green peppers, cut into eighths

water chestnuts (1-8 oz. can)

cherry tomatoes

Marinade: |

cup soy sauce
- 1/2
cup reserved pineapple juice
- 1/4
cup cooking oil
- 1
t. mustard

T. brown sugar
- 2
t. ground ginger
- 1
t. garlic salt
- 1/4
t. fresh ground pepper

Combine marinade
ingredients in a small saucepan; simmer 5 minutes. Cool. Marinate chicken
pieces for one hour, stirring occasionally. Drain, reserving marinade.
Thread chicken pieces, pineapple chunks, green pepper pieces, water chestnuts,
cherry tomatoes, and mushroom caps on metal skewers. Grill for 20 minutes,
basting with reserved marinade. Serves 4.
Serve with
whole grain rice, fresh broccoli and fruit ice for dessert.
