CousCous Salad

 
  • 1 small cucumber chopped
  • 1 med. tomato chopped
  • 1 med. carrol chopped
  • 1/2 c. quick cooking couscous
  • 2 Tlb. sliced green onion
  • 2 Tlb. sliced pitted ripe olives
  • 1/3 c. low fat Italian dressing

In a medium mixing bowl combine the cucumber, tomato, carrot, uncooked couscous, onion and olives. Pour salad dressing over vegetables. Cover; chill in refrigerator for 1-11/2 hr.

Makes 6 servings.
