Crispy Lemony Baked Fish

 
  • 1 1/4 c. crushed corn flakes
  • 1/4 c. shredded Parmesan cheese
  • 2 Tlb. minced green onions, green parts only
  • 1/8 tsp black pepper
  • 1 lemon
  • 1/4 c. egg substitute
  • 12 oz. haddock fillets (4 small fillets)

Preheat oven to 400 degree. Line baking sheet with parchment paper, set aside. Combine corn flakes, cheese, green onions and pepper on a plate. Grate lemon peel, stir into corn flake mixture. Reserve lemon. Pour egg substitute into shallow bowl. Dip fish fillets into egg substitute, then into cornflake mixture; coat well on both sides. Place coated fillets on prepared baking sheet. Bake about 10 minute or until cooked through. Cut reserved lemon into wedges; garnish fish with lemon wedges.
