Marinated Mediterranean Salad

 
  • 1/2 large cucumber, peeled and cut into chunks
  • 1/2 c. grape tomatoes
  • 1/4 c. sliced radishes
  • 2 scallions, thinly sliced
  • 1/4 c. chopped green bell pepper
  • 4 pimento-stuffed green olives, sliced
  • 1/4 c. minced fresh- parsley
  • 2 Tlb. extra virgin olive oil
  • 1 1/2 Tlb fresh lemon juice
  • Dash black pepper

Combine all the ingredients in a small bowl. Toss gently. Chill until ready to serve.

Recipe makes two servings.
