Poached Nectarines

 
  • 1 orange
  • 1/2 c. sugar
  • 2 tsp. vanilla
  • 3/4 c. water
  • 3 nectarines, pitted and quartered
  • 3/4 c. seedless red or green grapes, halved

Remove a 2x1-inch strip of peel from orange, reserve rest of orange for another use. For syrup, in a medium saucepan combine sugar, vanilla and 3/4 cup water. Add peel. Bring to boiling, stir till sugar is dissolved. Cut each quarter of nectarine in half and add to syrup. Bring to boiling, reduce heat. Simmer, covered, 5 minutes or till fruit is just tender. Remove from heat. Transfer nectarines and syrup to a bowl.

Remove orange peel, stir in grapes. Cool slightly. Serve warm or chill, covered several hours or overnight. If desired, garnish with fresh mint.
